About AURI

Ben Swanson

Ben is from Sauk Rapids, Minnesota and received his Bachelor’s degree in Chemistry from the University of North Dakota and his Master’s degree in Food Science from the University of Minnesota.

Ben is in charge of AURI’s Meat Lab, Developmental Kitchen, and Food Product Evaluation and Sensory Laboratory where he offers technical support to clients to help commercialize their products as well as works on larger, stakeholder driven initiatives to add value back to Minnesota agricultural products.
