You Are What You Eat: The Nexus of Food & Health

October 11, 2018 – 7:30 a.m. to 4:45 p.m.
Le Meridien Chambers, Minneapolis

The connection between food (diet) and health has long been known and studied.  While the “food pyramid” has evolved over the years, our thinking around the direct nexus between food and health and wellness is now coming into sharper focus.  The largest group of consumers likely to dominate spending decisions in the next few years is “millennials.”  Increasingly, they demand both transparency and traceability in the production of foods they eat, and more clearly established outcomes from those foods.   The response from farm and food producers will be critical to meeting this demand.

Larta Institute’s Global Ag Innovation Network (GAIN) and the Agricultural Utilization Research Institute (AURI) are teaming up to convene thought leaders, entrepreneurs, industry and academic representatives as well as investors to promote understanding around the old, the new and the relevant in the journey from farm to plate.  This forum will share trends and lead discussions around the numerous facets of the food-health continuum.

Our goal is for participants to gain a clearer understanding of how food ingredients can improve human health as well as to help advance opportunities in the health-food nexus revolution. We also aim to drive ideation around how foods can likely lead to better management of the health care trifecta of cancer, heart disease and diabetes,

The forum will feature innovative approaches from entrepreneurs who are developing products and services to address specific health issues through food and food ingredients. These span “solutions” that begin on the farm (designer crops), to food systems and processes which may better guide choices for consumers.
