Clay Newton, a native from Echo, Minnesota serves as AURI’s Meat Innovation Specialist. In this role, he provides direct assistance to the meat sector by integrating novel and existing meat innovations to stakeholders and clients by providing meat science leadership through product development and scale up assistance, education and training coordination. He also manages AURI’s meat laboratory, explores new innovations and develops robust professional networks. Clay’s passions lie in research, solving problems, and teaching. He grew up on a diversified crop and cow/calf operation and was heavily involved in 4-H and FFA, which provided him with a leadership context and strong work ethic. While being active in FFA, he served as the 2016-17 Minnesota FFA state treasurer and later earned his American Degree.
