AURI’s Southwest Office in Marshall includes a unique meat laboratory designed and built to assist in the formulation and analysis of animal products. From steaks and sausages to pork and poultry, the AURI Meat Laboratory gives Minnesota meat processors and businesses access to state-of-the-art equipment and accompanying product development expertise. This 2,000 square foot, USDA-inspected lab can be accessed by businesses throughout the state to help develop new, innovative meat products that add value to Minnesota livestock and poultry. The AURI meat lab offers resources many processors do not have to help develop new marketable meat products.


Meat Lab Capabilities

·         Product Development

The AURI meat laboratory has full meat processing capabilities for handling post-slaughter products. Equipment includes a smoke-house, linker, ham tumbler, sausage stuffer, packaging equipment, emulsifiers and more. The Meat Lab provides businesses with a resource for developing new products in a confidential environment.

·         Product Testing

AURI has the capability to conduct analytical laboratory test, shelf stability, shelf life testing and more. There is also a sensory room for performing product evaluations and comparisons. AURI staff is trained in carrying out those sensory evaluations.

·         Scientific Technical Assistance

Meat processors don’t have the luxury of shutting down production to test new value-added meat products. With access to AURI facilities and expertise, Minnesota processors have access to their own research and development department. This assistance is hands-on and can take place either in AURI’s Marshall facility or on-site.

AURI staff can also advise meat processors on regulations, best management practices, sanitation techniques and more. Staff can also assist in validating technology.

·         Market Assistance

Having a good, quality product isn’t always enough. It’s vital to any business to understand the market they are in. That knowledge can make all the difference between a successful or failed entry into the marketplace. AURI offers help in understanding the market to increase the likelihood of success.

AURI also assists with nutritional information including nutritional analysis and labeling for both traditional and niche product.
